This reverts commit 43bf8801f9.

diff-so-fancy was disabled as the interactive diff-filter in
43bf8801f9 ("git:interactive.diffFilter: Disable diff-so-fancy")
because of the rewrite in C of `git add -p`.

This was fixed in v2.38.0[^1].
